4 boneless, skinless chicken breasts
1/4 cup olive oil
1/4 cup fresh lemon juice (about 1-2 lemons)
2 cloves garlic, minced
1 Tbsp fresh parsley, chopped
1 Tbsp fresh thyme, chopped
1 Tbsp fresh rosemary, chopped
1 tsp salt
1/2 tsp black pepper
Zest of 1 lemon
Directions:
Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, thyme, rosemary, salt, pepper, and lemon zest.
Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
Preheat the Grill: Preheat your grill to medium-high heat (about 375-400°F).
Grill the Chicken: Remove the chicken from the marinade and discard the excess. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through with nice grill marks.
Serve: Let the chicken rest for a few minutes before slicing. Serve with your favorite sides, like a fresh salad or grilled vegetables.
