
Ingredients:
For the Turkey Meatballs:
1 lb ground turkey
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
For the Sauce:
2 Tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
1 tsp dried basil
1/2 tsp dried oregano
Salt and pepper, to taste
1/4 tsp red pepper flakes (optional, for heat)
For the Zucchini Noodles:
4 medium zucchini, spiralized into noodles
Fresh basil, for garnish (optional)
Grated Parmesan cheese, for serving
Directions:
Make the Meatballs: In a large bowl, combine the ground turkey, breadcrumbs, grated Parmesan, egg, minced garlic, parsley, oregano, salt, and black pepper. Mix until just combined. Shape the mixture into small meatballs (about 1 inch in diameter).
Cook the Meatballs: Heat 1 tablespoon of olive oil in a large, deep skillet over medium heat. Add the meatballs in a single layer and cook for 6-8 minutes, turning occasionally, until browned on all sides. Remove the meatballs from the skillet and set them aside.
Make the Sauce: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the chopped onion for 3-4 minutes until softened. Add the minced garlic and cook for another minute. Pour in the crushed tomatoes, dried basil, dried oregano, salt, pepper, and red pepper flakes if using. Stir to combine.
Simmer: Add the browned meatballs back into the skillet with the sauce. Reduce the heat to low, cover, and let simmer for 10-15 minutes until the meatballs are fully cooked and the sauce has thickened.
Prepare the Zucchini Noodles: While the meatballs are simmering, lightly sauté the spiralized zucchini noodles in a separate pan over medium heat for 2-3 minutes until just tender, or serve them raw for extra crunch.
Serve: Serve the turkey meatballs over a bed of zucchini noodles, garnished with fresh basil and a sprinkle of grated Parmesan cheese.
