One-Pan Sausage & Roasted Veggies

Ingredients:
2 smoked or spicy sausages, sliced
2 cups baby potatoes, cubed
1 cup baby carrots
1 cup broccoli florets
½ onion, chopped
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp dried oregano
½ tsp black pepper
½ tsp sea salt
1 tbsp fresh parsley, chopped (for garnish)

Step by Step:
1️⃣ Preheat & Prep:
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Season the Ingredients:
In a large bowl, toss potatoes, carrots, broccoli, and onion with olive oil.
Sprinkle with garlic powder, smoked paprika, oregano, salt, and black pepper.
Mix well to coat evenly.

3️⃣ Roast the Veggies & Sausage:
Spread the seasoned vegetables on the baking sheet.
Add the sliced sausage on top.
Roast for 25-30 minutes, stirring halfway through, until potatoes are golden and tender.

4️⃣ Garnish & Serve:
Sprinkle with fresh parsley before serving.
Enjoy hot as a main dish or side!
