Jalapeño Onion Smash Burgers

Ingredients:
1 lb ground beef (80/20)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon unsalted butter
1 large onion, thinly sliced
2 jalapeños, thinly sliced
4 slices cheddar cheese
4 hamburger buns, toasted
Pickles, for serving
Ketchup and mustard, for serving

Directions:
Divide the ground beef into 4 equal portions and shape each into a loose ball. Season each with salt and black pepper.
Heat a large cast-iron skillet or griddle over medium-high heat. Add butter and let it melt.
Add sliced onions and jalapeños to the skillet, cooking until softened and slightly caramelized, about 5-7 minutes. Remove from skillet and set aside.
Increase the heat to high. Place the beef balls in the hot skillet, then immediately press them down with a spatula to flatten them into thin patties. Cook for 2-3 minutes per side, until a deep brown crust forms.
Top each patty with a slice of cheddar cheese, allowing it to melt while the patties finish cooking.
To assemble, place a cheesy patty on the bottom half of each toasted bun, then top with the sautéed onions and jalapeños. Add pickles, ketchup, and mustard as desired. Finish with the top half of the bun.
