
Ingredients:
12 large scallops, cleaned
2 tablespoons olive oil
1 turnip, peeled and diced
1/2 cup heavy cream
Zest of 1 lime
Juice of 1/2 lime
Salt, to taste
Freshly ground black pepper, to taste
Fresh chives, chopped (optional, for garnish)
Directions:
In a medium saucepan, cook the diced turnip in salted water until tender, about 15 minutes. Drain and set aside.
In the same saucepan, add the cooked turnip, heavy cream, lime zest, and lime juice. Cook over medium heat until the mixture is heated through.
Blend the turnip mixture with a hand blender or in a food processor until smooth and creamy. Season with salt and pepper to taste. Set aside.
Heat olive oil in a large skillet over medium-high heat. Season the scallops with salt and pepper.
Sear the scallops in the hot skillet for 1-2 minutes per side, until they develop a golden crust and are just cooked through.
To serve, spread a spoonful of the turnip and lime cream on each plate. Place the seared scallops on top and garnish with chopped fresh chives, if desired.
