DORAYAKI JAPONÉS

Ingredients:
1 cup all-purpose flour
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 large eggs
1/4 cup honey
1/2 cup milk
1 tbsp vegetable oil
Red bean paste (for filling)

Directions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the eggs, then mix in the honey, milk, and vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Heat a non-stick skillet over medium heat and lightly grease with oil.
Pour 1/4 cup of batter into the skillet and spread into a circle. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
Repeat with the remaining batter, greasing the skillet as needed.
Let the pancakes cool slightly, then spread red bean paste on one pancake and top with another to make a sandwich.
