Crispy Roasted Parmesan Potatoes: Irresistibly Crunchy and Flavorful

Ingredients:
2 lbs baby potatoes, halved
1/4 cup olive oil
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Fresh parsley, chopped (for garnish)

Directions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Parmesan Mix: In a small bowl, combine the grated Parmesan cheese, garlic powder, paprika, dried oregano, salt, and black pepper.
Coat the Potatoes: Place the halved baby potatoes in a large bowl. Drizzle with olive oil and toss to coat. Sprinkle the Parmesan mixture over the potatoes and toss until evenly coated.
Arrange and Bake: Arrange the potatoes cut side down on the prepared baking sheet in a single layer. Bake for 30-35 minutes, or until the potatoes are golden brown and crispy.

Serve: Remove from the oven and garnish with chopped fresh parsley. Serve hot as a delicious side dish or snack.
