
Ingredients:
For the Chocolate Sponge Cake:
4 large eggs, separated
1/2 cup granulated sugar, divided
1/3 cup all-purpose flour
1/4 cup cocoa powder
1 tsp vanilla extract
Pinch of salt
For the Filling:
1 cup heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
1 1/2 cups fresh strawberries, sliced
For the Topping:
1/2 cup dark chocolate, melted
Powdered sugar, for dusting
Additional strawberries for garnish (optional)
Directions:
Prepare the Chocolate Sponge Cake:
Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
In a large bowl, beat the egg yolks with half of the sugar (1/4 cup) until thick and pale. Add the vanilla extract and mix well.
In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the egg yolk mixture until just combined.
In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar (1/4 cup) and continue beating until stiff peaks form.
Gently fold the egg whites into the chocolate mixture, being careful not to deflate the batter.
Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until the cake springs back when touched.
Immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the cake up in the towel, starting from the short side. Let it cool completely.
Make the Filling:
In a large bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
Unroll the cooled cake and spread the whipped cream evenly over the surface. Sprinkle the sliced strawberries on top.
Assemble the Roll:
Gently re-roll the cake, without the towel, into a log shape. Transfer to a serving platter.
Drizzle the melted dark chocolate over the top of the roll. Dust with powdered sugar and garnish with additional strawberries if desired.
Chill and Serve:
Refrigerate the chocolate roll for at least 1 hour before slicing and serving.
