Jalapeno Peach Chicken – A Sweet and Spicy Delight!

Ingredients:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1/2 cup peach preserves
1/4 cup soy sauce
1 tbsp Dijon mustard
1 tbsp minced fresh ginger
2 jalapeños, seeded and finely chopped (adjust to taste)
2 cloves garlic, minced
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)

Directions:
Prepare the Chicken:
Season the chicken breasts with salt and pepper.
Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.
Make the Sauce:
In the same skillet, reduce heat to medium. Add the minced garlic and chopped jalapeños. Sauté for about 1 minute until fragrant.
Stir in the peach preserves, soy sauce, Dijon mustard, and minced ginger. Cook for 2-3 minutes, stirring frequently, until the sauce is heated through and slightly thickened.
Combine:
Return the cooked chicken breasts to the skillet, spooning the sauce over them. Simmer for an additional 2-3 minutes, allowing the flavors to meld.
Serve:
Garnish with fresh cilantro and serve the jalapeno peach chicken over rice, with vegetables, or on its own. Enjoy the sweet and spicy flavor combination!
