
Ingredients:
3 cups rotini pasta (or your favorite shape)
1 1/2 cups diced dill pickles
1/2 cup diced red onion
1/2 cup chopped celery
1/2 cup diced red bell pepper
1/4 cup fresh dill, chopped
For the Dressing:
1 cup mayonnaise
1/2 cup sour cream
1/4 cup pickle juice (from the jar)
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Directions:
I. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
II. In a large mixing bowl, combine the cooled pasta, diced pickles, red onion, celery, red bell pepper, and chopped fresh dill.
III. In a separate small bowl, whisk together the mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, onion powder, salt, and pepper until smooth.
IV. Pour the dressing over the pasta mixture and toss until everything is well coated.
V. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
VI. Before serving, give the salad a good stir and garnish with extra dill and pickle slices if desired.
