Traditional Meatloaf with Glaze

Ingredients:
2 lbs ground beef (80% lean)
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup milk
1/2 cup breadcrumbs
2 large eggs
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried parsley
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce

Directions:
Preheat oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the Meatloaf: In a large bowl, combine the ground beef, finely chopped onion, minced garlic, milk, breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, and parsley. Mix gently with your hands until all ingredients are just combined. Be careful not to overmix.
Shape the Loaf: Transfer the meat mixture to the prepared baking sheet or loaf pan, shaping it into a loaf.
Make the Glaze: In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce until smooth.
Apply the Glaze: Spread half of the glaze over the top of the meatloaf, reserving the other half for later.
Bake: Bake the meatloaf in the preheated oven for 45 minutes. After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).
Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley and serve hot.
