Blackened Salmon with Mango Salsa

Ingredients:
For the Salmon:
4 salmon fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon cayenne pepper (adjust to taste)
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Mango Salsa:
1 ripe mango, peeled and diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 small jalapeño, finely chopped (optional)
Salt and pepper to taste

Directions:
Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red bell pepper, red onion, cilantro, lime juice, and jalapeño (if using). Season with salt and pepper to taste. Mix well and set aside to let the flavors meld.
Season the Salmon: In a small bowl, mix together the paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper. Pat the salmon fillets dry with paper towels, then rub the spice mixture evenly over all sides of the fillets.
Cook the Salmon: Heat olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets, skin-side down if applicable. Cook for 3-4 minutes on each side, or until the salmon is blackened on the outside and cooked to your desired doneness.
Serve: Transfer the blackened salmon to plates and top with a generous spoonful of the fresh mango salsa. Serve immediately with lime wedges on the side.
