2 lbs chicken breast, sliced into thin strips
3 bell peppers (red, yellow, green), sliced
1 large onion, sliced
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Fresh cilantro, chopped (for garnish)
Cooked rice or tortillas (for serving)
Directions:
I. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
II. In a large bowl, toss the sliced chicken, bell peppers, and onion with olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
III. Spread the seasoned chicken and vegetables evenly in the prepared baking dish.
IV. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the top.
V. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
VI. Garnish with fresh cilantro and serve hot with cooked rice or warm tortillas.
