Ingredients:
1 lb chicken breast, cut into bite-sized pieces
3 cups broccoli florets
3 cloves garlic, minced
2 tablespoons olive oil
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
I. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, seasoning with salt, pepper, and Italian seasoning. Cook for 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
II. In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Add the broccoli florets and chicken broth, cooking for 4-5 minutes until the broccoli is tender-crisp.
III. Reduce the heat to low, then pour in the heavy cream. Stir in the Parmesan cheese and continue to cook until the sauce thickens, about 3-4 minutes.
IV. Return the cooked chicken to the skillet, tossing it in the creamy garlic sauce with the broccoli until everything is well coated. Season with additional salt and pepper to taste.
V. Garnish with chopped fresh parsley and serve hot over rice, pasta, or enjoy as is.
