Bang Bang Chicken Skewers

Ingredients:
1 1/2 lbs chicken breast, cut into bite-sized pieces
1/4 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons sriracha (adjust to taste)
1 tablespoon honey
2 cloves garlic, minced
1 tablespoon lime juice
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)

Directions:
I. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, minced garlic, lime juice, salt, and pepper until well combined. Reserve a few tablespoons of the sauce for drizzling later.
II. Add the chicken pieces to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
III. Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
IV. Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
V. Remove the skewers from the grill and drizzle with the reserved sauce. Garnish with fresh cilantro and serve hot.
