Cinnamon French Toast Muffin Bites

Ingredients:
6 slices of bread, cubed
4 large eggs
1 cup milk
1/4 cup heavy cream
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter, melted
Maple syrup, for serving

Directions:
I. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with butter or non-stick spray.
II. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and nutmeg until well combined.
III. Add the cubed bread to the egg mixture, tossing to coat the bread evenly. Let it sit for 5-10 minutes to allow the bread to soak up the liquid.
IV. Divide the soaked bread mixture evenly among the muffin cups, pressing down gently to compact them.
V. Drizzle the tops with melted butter and bake for 20-25 minutes, or until the muffin bites are golden brown and set.
VI. Allow the muffin bites to cool slightly before removing them from the tin. Serve warm with a drizzle of maple syrup.
