Cheesy Potato Burritos

Ingredients:
1 pound ground beef
1 packet taco seasoning
2 cups frozen tater tots
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup salsa
4 large flour tortillas
1/4 cup green onions, chopped (optional, for garnish)

Directions:
I. Preheat your oven and bake the tater tots according to the package instructions until they are golden and crispy.
II. In a large skillet, cook the ground beef over medium heat until fully browned. Drain any excess fat, then stir in the taco seasoning according to package instructions.
III. Warm the flour tortillas in a skillet or microwave until soft and pliable.
IV. To assemble each burrito, place a portion of the cooked tater tots in the center of the tortilla. Top with seasoned ground beef, shredded cheddar, and Monterey Jack cheeses, a spoonful of salsa, and a dollop of sour cream.
V. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
VI. Serve the burritos warm, garnished with chopped green onions if desired.
