Mediterranean Spinach and Feta Crisps

Ingredients:
• 1 cup fresh spinach, chopped
• ½ cup feta cheese, crumbled
• ½ cup parmesan cheese, finely grated
• ½ cup mozzarella cheese, shredded
• 1 tsp olive oil
• ½ tsp garlic powder
• ½ tsp dried oregano
• Salt and pepper, to taste

Instructions:

  1. Preheat the oven: Set to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the mixture: In a bowl, combine chopped spinach, feta, parmesan, and mozzarella cheeses. Add olive oil, garlic powder, oregano, and season with salt and pepper. Mix until well combined.
  3. Form the crisps: Spoon small mounds of the mixture onto the baking sheet and flatten slightly with the back of a spoon to form thin circles. Leave space between each crisp.
  4. Bake: Bake for 8-10 minutes, or until golden around the edges and the cheese is bubbly.
  5. Cool and serve: Let the crisps cool for 5 minutes before transferring them to a serving plate.
