Pumpkin Pecan Frozen Yogurt

Ingredients

2 cups plain Greek yogurt

1 cup pumpkin puree

1/2 cup maple syrup or honey

1 teaspoon pumpkin spice

1 teaspoon vanilla extract

1/2 cup chopped pecans

1/4 cup brown sugar (optional for extra sweetness)

Directions

Mix the base: In a large bowl, whisk together Greek yogurt, pumpkin puree, maple syrup, pumpkin spice, and vanilla extract until smooth.

Freeze: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30 minutes until it reaches a soft-serve consistency, about two to three hours.

Add pecans: Fold in chopped pecans once the yogurt has thickened.

Serve or store: Serve immediately for soft-serve, or transfer to a container and freeze for another one to two hours for a firmer texture.
