Pork Chops with Onion and Mushroom Gravy

Ingredients:
4 bone-in pork chops
1 tablespoon olive oil
1 large onion, thinly sliced
8 oz mushrooms, sliced
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
I. Preheat your oven to 350°F (175°C).
II. Season the pork chops on both sides with garlic powder, onion powder, salt, and pepper.
III. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side, until browned. Remove the pork chops and set aside.
IV. In the same skillet, add the sliced onions and mushrooms. Sauté for 5-7 minutes, until the onions are softened and the mushrooms are browned.
V. Stir in the cream of chicken soup and chicken broth, mixing well to combine. Bring the mixture to a simmer.
VI. Return the pork chops to the skillet, spooning some of the gravy over the top.
VII. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork chops are cooked through and tender.
VIII. Garnish with chopped fresh parsley before serving.
