Easy Cheesy Manicotti

Ingredients:
8 manicotti pasta shells
2 cups shredded mozzarella cheese
15 ounces ricotta cheese
1/2 cup grated Parmesan cheese
1 large egg
2 cups marinara sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
I. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
II. Cook the manicotti pasta according to package instructions until al dente. Drain and set aside to cool slightly.
III. In a medium bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, Italian seasoning, salt, and pepper until well combined.
IV. Carefully stuff each manicotti shell with the ricotta mixture using a spoon or piping bag.
V. Spread 1 cup of marinara sauce on the bottom of the prepared baking dish. Arrange the stuffed manicotti over the sauce in a single layer.
VI. Pour the remaining marinara sauce over the top of the manicotti. Sprinkle with the remaining 1 cup of mozzarella cheese.
VII. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
VIII. Garnish with chopped fresh parsley before serving.
