Caramelized Pulled Beef Brisket in a Rich Spicy Sauce

Ingredients:
3-4 lb beef brisket
Salt and pepper to taste
2 tablespoons olive oil
2 large onions, thinly sliced
4 cloves garlic, minced
1 cup beef broth
1/2 cup apple cider vinegar
1/2 cup brown sugar
1/4 cup soy sauce
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper (optional, for extra heat)
Fresh parsley, chopped (for garnish)

Directions:
I. Preheat your oven to 300°F (150°C). Season the brisket generously with salt and pepper on both sides.
II. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Sear the brisket on all sides until browned, about 4-5 minutes per side. Remove the brisket and set aside.
III. In the same pot, add the sliced onions and cook until caramelized, about 10 minutes. Add the minced garlic and cook for another minute.
IV. Stir in the tomato paste, beef broth, apple cider vinegar, brown sugar, soy sauce, Worcestershire sauce, smoked paprika, cumin, and cayenne pepper. Bring the mixture to a simmer.
V. Return the brisket to the pot, spooning some of the sauce over the top. Cover with a lid and transfer to the preheated oven. Cook for 3-4 hours, or until the brisket is tender and easily pulls apart with a fork.
VI. Remove the brisket from the pot and shred it using two forks. Return the shredded beef to the pot and stir it into the sauce. Simmer on the stove for an additional 10-15 minutes to allow the flavors to meld.
VII. Garnish with fresh parsley and serve hot, with extra sauce spooned over the top.
