
Ingredients:
2 lbs baby potatoes, quartered
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
I. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
II. In a large bowl, toss the quartered potatoes with olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper until evenly coated.
III. Spread the potatoes out in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
IV. Remove the potatoes from the oven and immediately sprinkle them with grated Parmesan cheese, tossing to coat the potatoes in the cheese.
V. Return the potatoes to the oven for an additional 5 minutes, allowing the Parmesan to melt and crisp up.
VI. Garnish with fresh parsley and serve hot.
