Ingredients:
Deviled Eggs:
6 large eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon apple cider vinegar
1/2 teaspoon Cajun seasoning
Salt and pepper to taste
1 tablespoon fresh chives, chopped (for garnish)
Cajun Shrimp:
12 small shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon Cajun seasoning
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
Pinch of cayenne pepper (optional, for extra heat)
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
I. Prepare the Eggs:
Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 12 minutes. Drain and cool the eggs under cold running water. Peel the eggs and slice them in half lengthwise. Scoop out the yolks and place them in a bowl.
II. Make the Deviled Egg Filling:
Mash the egg yolks with a fork and mix in the mayonnaise, Dijon mustard, apple cider vinegar, Cajun seasoning, salt, and pepper until smooth and creamy. Spoon or pipe the yolk mixture back into the egg whites.
III. Cook the Cajun Shrimp:
In a small bowl, toss the shrimp with olive oil, Cajun seasoning, garlic powder, smoked paprika, and cayenne pepper. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side, until pink and cooked through.
IV. Assemble the Deviled Eggs:
Top each deviled egg with a cooked shrimp. Garnish with chopped chives and parsley for a pop of color and extra flavor.
V. Serve and Enjoy:
Arrange the Cajun Shrimp Deviled Eggs on a platter and serve immediately, or refrigerate until ready to serve.
