
Ingredients:
4 pieces of cube steak (about 1 ½ lbs)
1 cup all-purpose flour
1 teaspoon seasoned salt
1 teaspoon black pepper
1 teaspoon paprika
2 large eggs
¼ cup milk
½ cup vegetable oil (for frying)
For the Gravy:
¼ cup all-purpose flour
2 cups whole milk
Salt and pepper to taste
Directions:
I. In a shallow dish, mix together the flour, seasoned salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk.
II. Dredge each cube steak in the flour mixture, then dip it into the egg mixture, and finally dredge it again in the flour mixture, pressing the flour onto the steak to ensure it’s well-coated.
III. Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, add the coated steaks and fry for 3-4 minutes on each side, or until golden brown and crispy. Remove the steaks from the skillet and set aside on a paper towel-lined plate to drain excess oil.
IV. For the gravy, remove all but 2 tablespoons of oil from the skillet. Stir in the ¼ cup of flour and cook over medium heat, whisking constantly, until the flour turns a light brown color, about 2-3 minutes.
V. Slowly whisk in the milk, continuing to whisk until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.
VI. Serve the chicken fried steak hot, smothered with the homemade gravy. Enjoy with mashed potatoes or your favorite sides!
