
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter, softened
1 cup whole milk
4 large eggs
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pecans
For the Caramel Frosting:
1 cup unsalted butter
2 cups packed brown sugar
1/2 cup heavy cream
2 teaspoons vanilla extract
2 cups powdered sugar, sifted
1/2 cup chopped pecans (for topping)
Directions:
I. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
II. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
III. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined. Fold in the chopped pecans.
IV. Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
V. While the cakes are cooling, prepare the caramel frosting. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream. Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes, stirring constantly. Remove from heat and stir in the vanilla extract. Let the caramel cool slightly, then gradually whisk in the powdered sugar until smooth and creamy.
VI. To assemble the cake, place one layer on a serving plate and spread a portion of the caramel frosting over the top. Repeat with the remaining layers. Frost the top and sides of the cake with the remaining caramel frosting.
VII. Sprinkle the top of the cake with chopped pecans. Allow the frosting to set before slicing and serving.
