
Ingredients:
8 large eggs
2 cups whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 loaf of French bread or brioche, cubed
3 ripe bananas, sliced
1/2 cup chopped pecans (optional)
1/2 cup brown sugar
1/4 cup unsalted butter, melted
Maple syrup (for serving)
Directions:
I. Grease a 9×13-inch baking dish. Spread half of the cubed bread evenly in the dish.
II. In a large bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
III. Layer the sliced bananas over the cubed bread in the baking dish. Sprinkle the chopped pecans on top if using. Add the remaining bread cubes over the bananas and nuts.
IV. Pour the egg mixture evenly over the bread, pressing down lightly to ensure all the bread cubes are soaked. Cover the dish with plastic wrap and refrigerate overnight.
V. The next morning, preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature while the oven preheats.
VI. In a small bowl, mix the brown sugar and melted butter until combined. Drizzle this mixture over the top of the casserole.
VII. Bake the casserole for 45-55 minutes, or until the top is golden brown and the center is set.
VIII. Allow the casserole to cool slightly before serving. Serve with a drizzle of maple syrup and extra banana slices if desired.
