
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg, beaten
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup mozzarella cheese, cubed
1/4 cup ketchup (optional, for topping)
Fresh parsley, chopped (for garnish)
Directions:
I. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.
II. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, beaten egg, milk, chopped onion, minced garlic, Italian seasoning, salt, and black pepper. Mix until all ingredients are evenly combined.
III. Take a small portion of the meat mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center, then wrap the meat mixture around the cheese, forming it into a small ball. Repeat with the remaining meat and cheese.
IV. Place the meatloaf bites on the prepared baking sheet or in the muffin tin. If desired, brush the tops with ketchup for extra flavor.
V. Bake in the preheated oven for 18-20 minutes, or until the meat is cooked through and the cheese is melted and gooey.
VI. Remove from the oven and let the bites cool slightly. Garnish with fresh parsley and serve warm.
