3 large eggs
1 cup vegetable oil
3 teaspoons vanilla extract
2 ¼ cups granulated sugar
2 cups grated zucchini
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups fresh blueberries
Directions:
I. Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans.
II. In a large mixing bowl, beat the eggs until light and fluffy. Add the vegetable oil, vanilla extract, and granulated sugar, mixing until well combined.
III. Stir in the grated zucchini until evenly distributed throughout the batter.
IV. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
V. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
VI. Gently fold in the fresh blueberries, being careful not to overmix.
VII. Pour the batter evenly into the prepared loaf pans.
VIII. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
IX. Let the bread cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
