
Ingredients:
For the Donuts:
2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 large egg
1 tsp vanilla extract
Vegetable oil for frying
For the Strawberry Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/4 cup strawberry jam or preserves
1/2 tsp vanilla extract
1/2 cup fresh strawberries, finely chopped
For the Topping:
1/2 cup granulated sugar
1 tsp ground cinnamon
Directions:
Prepare the Donuts:
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In another bowl, whisk together the milk, melted butter, egg, and vanilla extract.
Combine the wet and dry ingredients, stirring until just mixed. The dough will be slightly sticky.
On a floured surface, roll out the dough to about 1/2 inch thickness. Use a donut cutter or a round cookie cutter to cut out circles of dough.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Fry the donuts in batches for 1-2 minutes per side, or until golden brown. Remove and drain on a paper towel-lined plate.
Make the Strawberry Cheesecake Filling:
In a medium bowl, beat the softened cream cheese until smooth.
Add the powdered sugar, strawberry jam, vanilla extract, and finely chopped strawberries. Mix until well combined and creamy.
Fill the Donuts:
Using a piping bag fitted with a filling tip (or a ziplock bag with the corner snipped), fill the donuts with the strawberry cheesecake mixture by inserting the tip into the side of each donut and gently squeezing the filling inside.
Prepare the Topping:
In a small bowl, mix the granulated sugar and ground cinnamon together.
Roll the filled donuts in the cinnamon-sugar mixture until fully coated.
