1 lb fresh cheese curds (preferably white cheddar)
1 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1 cup cold club soda or beer
Vegetable oil, for frying
Optional: Ranch or marinara sauce for dipping
Directions:
In a large, heavy-bottomed pot or deep fryer, heat about 2-3 inches of vegetable oil to 375°F (190°C).
In a medium bowl, whisk together the flour, baking powder, and salt. Gradually add the cold club soda or beer, whisking until the batter is smooth. The batter should be slightly thick but still pourable.
Dip the cheese curds into the batter, ensuring they are fully coated.
Carefully drop the battered cheese curds into the hot oil in small batches, being careful not to overcrowd the pot. Fry for 1-2 minutes, turning occasionally, until the curds are golden brown and crispy.
Remove the fried cheese curds from the oil with a slotted spoon and drain them on a paper towel-lined plate.
Serve the fried cheese curds hot, with ranch or marinara sauce on the side for dipping if desired.
