Cheesy Chicken and Rice Casserole

Ingredients:
2 cups cooked chicken, diced
1 ½ cups uncooked rice
3 cups chicken broth
1 cup shredded cheddar cheese
½ cup sour cream
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 cup green onions, chopped
Salt and pepper, to taste

Directions:
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat and sauté onions and garlic until softened.
Add uncooked rice and chicken broth to the skillet, stir well, and bring to a simmer.
Transfer rice mixture to a greased casserole dish, then add diced chicken, sour cream, and cheddar cheese. Mix gently.
Bake for 25-30 minutes until bubbly and golden on top.
Garnish with chopped green onions and serve hot!
