
Ingredients:
1 lb baby potatoes, quartered
1 lb smoked sausage, sliced
1 ½ cups shredded cheddar cheese
1 cup ranch dressing
½ cup sour cream
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh parsley (for garnish)
Salt and pepper, to taste
Directions:
Preheat the oven to 400°F (200°C).
Toss the baby potatoes in olive oil, garlic, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes until tender.
Brown the smoked sausage slices in a skillet over medium heat for 5-7 minutes.
Combine ranch dressing and sour cream in a large mixing bowl. Add the roasted potatoes and sausage, then toss until well coated.
Transfer the mixture to a baking dish, sprinkle shredded cheddar cheese evenly on top.
Bake in the preheated oven for 10-12 minutes, until the cheese is melted and bubbly.
Garnish with fresh parsley and serve warm.
