1 cup unsalted butter, softened
1 cup vegetable oil
1 cup granulated sugar
1 cup powdered sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
4 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Maraschino cherries (for topping)
Sliced almonds (optional for garnish)
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
Beat in the eggs, vanilla extract, and almond extract until well combined.
In a separate bowl, whisk together flour, baking soda, and cream of tartar. Gradually add this to the wet ingredients, mixing until fully incorporated.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving some space between each.
Press a maraschino cherry gently into the center of each cookie dough ball. Add sliced almonds around the cherry if desired.
Bake for 10-12 minutes, or until the edges are lightly golden.
Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
