
Ingredients:
1 lb chicken breast, cubed
1 tbsp vegetable oil
2 cups broccoli florets
2 green onions, sliced (for garnish)
For the Teriyaki Sauce
1/4 cup soy sauce
1/4 cup water
2 tbsp honey or brown sugar
1 tbsp rice vinegar
1 tbsp cornstarch
1 clove garlic, minced
1 tsp ginger, grated
Instructions:
Prepare the sauce: In a small bowl, whisk together soy sauce, water, honey (or brown sugar), rice vinegar, garlic, ginger, and cornstarch. Set aside.
Cook the chicken: Heat the oil in a large skillet over medium heat. Add the cubed chicken and cook for 5-6 minutes until the chicken is cooked through and golden brown on the outside. Remove from the skillet and set aside.
Cook the broccoli: In the same skillet, add a little more oil if needed, and sauté the broccoli for 3-4 minutes until slightly tender but still crisp.
Combine the sauce: Add the chicken back to the skillet with the broccoli. Pour the teriyaki sauce over the chicken and broccoli. Stir and cook for 2-3 minutes until the sauce thickens and everything is well coated.
Garnish and serve: Remove from heat and garnish with sliced green onions. Serve hot over rice or noodles.
