
Ingredients:
2 packages (14.3 oz) Oreo cookies (Funfetti or regular)
3 cups heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
1/4 cup rainbow sprinkles (optional, plus extra for topping)
Mini Oreo cookies (optional, for garnish)
Instructions:
Whip the Cream: In a large mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. If you’d like, fold in some rainbow sprinkles to give it that extra Funfetti flair.
Layer the Cake: In a 9×13-inch pan, start by arranging a single layer of Oreo cookies on the bottom. You may need to break a few to fill in the gaps. Spread a generous layer of whipped cream on top of the cookies, smoothing it out evenly. Repeat this process, creating alternating layers of Oreo cookies and whipped cream, until you reach the top of the pan (typically 3-4 layers).
Top and Decorate: Finish with a final layer of whipped cream. Sprinkle rainbow sprinkles on top and add mini Oreo cookies for garnish if desired.
Chill and Set: Cover the icebox cake with plastic wrap and refrigerate for at least 6 hours, or overnight, to allow the cookies to soften and the cake to set.
Serve: Once set, slice and serve your colorful, fun-filled Oreo icebox cake!
