Apple Spinach Salad with Feta, Pistachios, and Honey-Mustard Lemon Dressing

Ingredients:
4 cups fresh spinach
1 large apple, thinly sliced
1/4 cup feta cheese, crumbled
1/4 cup pistachios, chopped
2 tbsp olive oil
1 tbsp honey
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
Salt and pepper to taste

Directions:
Assemble the salad: Place fresh spinach in a bowl, layer with apple slices, crumbled feta, and chopped pistachios.
Make the dressing: In a small bowl, whisk together the olive oil, honey, Dijon mustard, lemon juice, salt, and pepper until well combined.
Drizzle and serve: Drizzle the honey-mustard lemon dressing over the salad. Toss gently to coat and serve immediately.
