1 package (16 oz) potato gnocchi
3 cups fresh spinach
2 cloves garlic, minced
1 cup heavy cream
1/4 cup Parmesan cheese, grated
1 tsp smoked paprika
1/2 tsp Italian seasoning
1/4 tsp red pepper flakes (adjust for heat preference)
1 tbsp olive oil
Salt and pepper to taste
Directions:
Cook the gnocchi: Boil the gnocchi in salted water according to package instructions, then drain and set aside.
Sauté the garlic: In a large skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
Add spinach and cream: Stir in the spinach and cook until wilted. Add the heavy cream, smoked paprika, Italian seasoning, salt, and pepper. Simmer for 2-3 minutes, stirring occasionally.
Combine the gnocchi: Add the cooked gnocchi to the skillet and toss to coat in the creamy spinach sauce. Stir in the Parmesan cheese and let everything cook for an additional minute.
Serve and garnish: Sprinkle with red pepper flakes for a kick and serve hot!
