
Ingredients:
4 boneless, skinless chicken breasts
4 slices bacon, cooked and crumbled
1 cup fresh spinach, sautéed
1/2 cup shredded cheddar cheese
1/2 cup cream cheese, softened
2 cloves garlic, minced
1 tbsp olive oil
Salt and pepper to taste
Directions:
Prepare the chicken: Preheat the oven to 375°F (190°C). Slice slits about 1 inch apart across each chicken breast, making sure not to cut all the way through.
Sauté the spinach: In a skillet, heat olive oil and sauté the garlic until fragrant. Add spinach and cook until wilted. Remove from heat and mix in the softened cream cheese. Season with salt and pepper.
Stuff the chicken: Stuff each slit with the sautéed spinach mixture, shredded cheddar cheese, and crumbled bacon.
Bake the chicken: Place the stuffed chicken breasts on a baking sheet or dish. Drizzle with a bit of olive oil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
Serve: Let the chicken rest for a few minutes before serving. Garnish with additional bacon and cheese if desired.
