Steak Tacos with Mango Salsa and Spicy Cilantro-Lime Sriracha Crema

Ingredients:
1 lb flank steak (or skirt steak)
8 small corn tortillas
2 ripe mangoes, diced
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
Salt and pepper to taste
For the Spicy Cilantro-Lime Sriracha Crema:
1/2 cup sour cream
2 tbsp fresh cilantro, finely chopped
1 tbsp lime juice
1-2 tsp Sriracha (adjust to taste)
Salt to taste

Directions:
Grill the steak: Preheat a grill or grill pan over medium-high heat. Season the flank steak generously with salt and pepper. Grill the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Let the steak rest for 5 minutes before slicing it thinly against the grain.
Prepare the mango salsa: In a bowl, combine the diced mango, chopped cilantro, and a squeeze of lime juice. Season with salt and pepper, and mix well.
Make the crema: In a small bowl, mix together the sour cream, cilantro, lime juice, Sriracha, and a pinch of salt until smooth. Adjust seasoning and heat to taste.
Assemble the tacos: Warm the tortillas in a dry skillet or on the grill. Place a few slices of steak on each tortilla, top with the mango salsa, and drizzle with the spicy cilantro-lime Sriracha crema.
Garnish and serve: Serve the tacos with extra lime wedges and cilantro for garnish.
