Chocolate Chia Pudding

Ingredients:
1/4 cup chia seeds
1 1/4 cup almond milk (or any milk of choice)
2 tbsp cocoa powder (unsweetened)
2 tbsp maple syrup (or sweetener of choice)
1 tsp vanilla extract
Fresh berries and cacao nibs for topping (optional)

Directions:
Mix the ingredients: In a medium bowl, whisk together the chia seeds, almond milk, cocoa powder, maple syrup, and vanilla extract until well combined.
Let it set: Cover and refrigerate the mixture for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
Stir and serve: After setting, give the pudding a good stir. Divide into individual serving cups and top with fresh berries and cacao nibs if desired.
