4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup Italian breadcrumbs
1/2 cup grated Parmesan cheese
1 1/2 cups marinara sauce
1 1/2 cups mozzarella cheese, shredded
1/4 cup fresh basil or parsley, chopped (for garnish)
Salt and pepper to taste
Olive oil for frying
Directions:
Prepare the chicken: Season the chicken breasts with salt and pepper. Dredge each chicken breast in flour, then dip in the beaten eggs, and coat in the Italian breadcrumbs mixed with Parmesan cheese.
Fry the chicken: In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 3-4 minutes per side, or until golden brown and crispy. Transfer the fried chicken to a paper towel-lined plate to drain.
Assemble the Chicken Parmesan: Preheat the oven to 375°F (190°C). Place the fried chicken breasts in a baking dish. Spoon marinara sauce over each piece of chicken and top with shredded mozzarella cheese.
Bake: Bake the chicken for 15-20 minutes, or until the cheese is melted and bubbly.
Serve: Garnish with fresh basil or parsley and serve hot with pasta or a side salad.
