
Ingredients:
2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
3 cups broccoli florets
1/4 cup soy sauce
1/4 cup honey
2 tbsp rice vinegar
2 tbsp sesame oil
2 cloves garlic, minced
1 tbsp ginger, minced
1/2 cup chicken broth
1 tbsp cornstarch (mixed with 2 tbsp water)
2 tbsp sesame seeds (for garnish)
Cooked rice or noodles (optional, for serving)
Directions:
Cook the chicken: Heat sesame oil in a large skillet or pot over medium heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Sauté the broccoli: In the same pot, add the broccoli florets and sauté for 3-4 minutes until slightly tender but still crisp. Remove and set aside with the chicken.
Make the sauce: In the pot, add the garlic and ginger, cooking until fragrant. Then, whisk in the soy sauce, honey, rice vinegar, and chicken broth. Bring to a simmer.
Thicken the sauce: Stir the cornstarch slurry into the sauce and simmer for a few minutes until the sauce thickens.
Combine: Return the cooked chicken and broccoli to the pot, tossing to coat everything in the sauce. Cook for an additional 2-3 minutes until everything is heated through.
Serve: Garnish with sesame seeds and serve over rice or noodles for a complete meal.
