Grilled Lemon Herb Chicken Thighs

Ingredients:
8 bone-in, skin-on chicken thighs
1/4 cup olive oil
2 tbsp fresh lemon juice
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
3 garlic cloves, minced
Salt and pepper to taste
Lemon wedges (for serving)

Directions:
Marinate the chicken: In a bowl, mix olive oil, lemon juice, rosemary, thyme, garlic, salt, and pepper. Add the chicken thighs and coat them well. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for more flavor).
Preheat the grill: Heat your grill to medium-high heat.
Grill the chicken: Remove the chicken from the marinade and place it on the grill. Grill for 6-7 minutes per side, until the skin is crispy and the internal temperature reaches 165°F (75°C).
Serve: Transfer the chicken to a serving platter. Garnish with extra fresh herbs and serve with lemon wedges for an extra citrusy kick!
