Classic East Coast Shrimp Roll

Ingredients:
1 lb cooked shrimp (peeled and deveined)
4 split-top hot dog buns
1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
1 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped (plus more for garnish)
1/2 tsp Old Bay seasoning (optional)
Salt and pepper to taste
2 tbsp butter, melted
Lettuce leaves (optional, for serving)

Instructions:
Prepare the Dressing: In a mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, chopped dill, chives, Old Bay seasoning, salt, and pepper. Stir until smooth.
Toss the Shrimp: Add the cooked shrimp to the dressing and toss until evenly coated. Let it chill in the fridge for about 10 minutes for the flavors to meld together.
Toast the Buns: Brush the insides of the hot dog buns with melted butter and toast them in a skillet or griddle over medium heat until golden brown.
Assemble the Rolls: Optional: Place a lettuce leaf inside each toasted bun, then generously pile the shrimp mixture into each roll. Garnish with extra chives.
Serve: Serve immediately with a side of chips or fries, and enjoy!
