South Louisiana Shrimp Creole

Ingredients:
1 lb shrimp, peeled and deveined
1 can (14.5 oz) diced tomatoes
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
1/2 cup celery, chopped
3 cloves garlic, minced
1/4 cup tomato paste
1 cup seafood broth
1 tbsp olive oil
1 tbsp Creole seasoning
1/2 tsp cayenne pepper (optional)
Salt and pepper to taste
Fresh parsley for garnish
Cooked white rice for serving

Directions:
In a large skillet, heat olive oil over medium heat. Add onions, bell pepper, and celery. Cook until softened, about 5 minutes.
Stir in garlic and tomato paste, cooking for 2 minutes until fragrant.
Add diced tomatoes, seafood broth, Creole seasoning, and cayenne pepper (if using). Stir well and simmer for 10-15 minutes, allowing the flavors to meld.
Add shrimp to the skillet and cook for 5-7 minutes, or until shrimp are pink and cooked through.
Season with salt and pepper to taste, then remove from heat.
Serve over cooked white rice and garnish with fresh parsley.
