Crockpot Pierogi Casserole with Sausage

Ingredients:
1 package (16 oz) frozen pierogi (potato & cheese preferred)
1 lb smoked sausage or kielbasa, sliced
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1 small onion, diced
1/4 cup chicken broth
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish

Directions:
Cook the sausage: In a skillet over medium heat, add olive oil and sauté the sliced sausage until browned on both sides, about 5-7 minutes. Remove from heat.
Assemble the casserole: In the crockpot, layer the frozen pierogi, cooked sausage, and diced onions.
Prepare the sauce: In a bowl, mix together cream of mushroom soup, sour cream, chicken broth, salt, and pepper. Pour this mixture evenly over the pierogi and sausage.
Add the cheese: Sprinkle shredded cheddar and mozzarella cheese on top of the casserole.
Cook: Cover and cook on low heat for 3-4 hours, or until the pierogi are cooked through and the casserole is bubbly.
Serve: Garnish with fresh parsley and serve hot.
