
Ingredients:
1 lb chicken breast, sliced
8 oz penne pasta
2 cups spinach, fresh
1/2 cup diced tomatoes
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 tbsp olive oil
1/2 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Cook the pasta: Cook the penne pasta according to the package instructions. Drain and set aside.
Cook the chicken: In a large skillet, heat olive oil over medium heat. Season the chicken with salt, pepper, and Italian seasoning, then cook until browned on both sides and fully cooked, about 5-7 minutes per side. Remove the chicken and set aside.
Sauté the garlic and spinach: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Add the spinach and diced tomatoes, cooking until the spinach wilts.
Make the sauce: Pour in the heavy cream and grated Parmesan cheese, stirring until the sauce thickens slightly, about 3-4 minutes.
Combine everything: Add the cooked pasta to the skillet and toss to coat with the creamy sauce. Slice the cooked chicken and place it on top of the pasta.
Serve: Garnish with fresh parsley and serve hot.
