
Ingredients:
6 ripe pears, peeled, cored, and chopped
1/2 cup sugar (adjust to taste)
1/2 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 cup apple cider vinegar
1/2 cup water
1 tsp vanilla extract
Directions:
Prepare the pears: In a large pot, combine the chopped pears, sugar, brown sugar, cinnamon, nutmeg, ginger, apple cider vinegar, and water.
Cook the mixture: Bring to a boil over medium heat, then reduce the heat to low and simmer for 45-60 minutes, stirring occasionally, until the pears are very soft and the mixture thickens.
Blend: Once the pears are soft, use an immersion blender to blend the mixture until smooth (or transfer to a blender in batches).
Cook further: Continue to cook the blended mixture on low heat for another 30 minutes, stirring occasionally, until it reaches a thick, spreadable consistency.
Add vanilla: Stir in the vanilla extract and remove from heat.
Store: Let the pear butter cool before transferring it to jars. Store in the refrigerator for up to 2 weeks or process in a water bath for longer preservation.
