Teriyaki Chicken Stir Fry

Ingredients:
1 lb chicken breast, cubed
1 tbsp vegetable oil
1/2 cup soy sauce
1/4 cup honey
2 tbsp rice vinegar
1 tbsp ginger, minced
1 tbsp garlic, minced
1 tbsp cornstarch
1/4 cup water
1 cup mushrooms, sliced
Sesame seeds, for garnish
Green onions, chopped for garnish

Directions:
Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, minced ginger, and garlic. Set aside.
Cook the chicken: Heat oil in a large pan over medium-high heat. Add the chicken cubes and cook until browned on all sides, about 6-8 minutes. Remove from the pan and set aside.
Stir fry the mushrooms: In the same pan, add the sliced mushrooms and cook until they soften and brown slightly.
Thicken the sauce: Mix cornstarch with water to create a slurry. Pour the prepared sauce into the pan with the mushrooms, then stir in the slurry. Let the sauce simmer until it thickens.
Combine everything: Add the cooked chicken back to the pan, tossing it in the sauce until evenly coated. Let it cook for an additional 2-3 minutes.
Garnish and serve: Top with sesame seeds and chopped green onions before serving. Enjoy over rice or noodles!
